A day dedicated to innovation, aggregation, supply chain and wheat valorization pathways was held in Empoli at the Palazzo delle Esposizioni. As part of the PINFOID project, Laura Ercoli, full professor and coordinator of the PhD in Agrobiosciences at Sant'Anna School, together with Elisa Pellegrino, a researcher in the Plant-Soil Interactions group of Crop Science Research Center at Sant'Anna School, presented a speech on agronomic innovations to enhance the nutraceutical properties of wheat. 

The PINFOID project, together with the PRO.CE.VA network, fielded innovative agrotechnics on soft and durum wheat on two farms in the Florence area, the Simonetti farm and the Crocetti Eligio farm. Old wheat genotypes were used in comparison with modern varieties, introducing the technique of agronomic biofortification with iron and zinc.

Lastly, a "quality diet", supplemented with products made from biofortified flour and semolina, was developed to support the treatment of patients with Crohn's disease.
